Recipes - Easy Chicken Biryani

Ingredients:

750 gms. chicken
½ kg. basmati rice
½ kg. onions ( thinly sliced)
4-5 tomatoes ( finely chopped)
7-8 green chillies
1 tsp. turmeric powder 
2-3” cinnamon
4-5 cloves
3-4 cardamoms
1 lime
2 tbsp. ginger garlic paste
25 gms. coriander leaves ( finely chopped)
25 gms. mint leaves (finely chopped)
125 ml oil
2 tbsp. ghee
Salt as per taste
Roasted nuts and color ( optional)

Method:

Wash and soak rice in water for at least  30 mts,  then strain.  In a large vessel , boil 5 to 6 cups of water, add rice , little salt and cook rice until half done. Strain  it and set aside.

Cut chicken into medium pieces, clean, wash and strain. 

In a thick bottomed vessel,  heat oil, fry half of the sliced onions until crisp and golden brown in color. Remove and set aside. In the same oil , splutter cinnamon, cloves and cardamom. Now add remaining onion and fry until translucent.  Add ginger garlic paste, tomatoes and green chillies and fry for few minutes.  Add chicken, salt and lime juice.  Cover and cook until the chicken turns soft and tender.

Now in another vessel, spread little ghee .  Spread a layer of rice and then a layer of chicken with gravy. Sprinkle fried onion, mint and coriander leaves.  Repeat this procedure into 2-3 layers. Finally sprinkle ghee on the top.  

Spread roasted nuts and sprinkle color ( optional)

Cover the vessel with a tight lid, keep on very slow flame until rice is cooked. 

Serve biryani with curd or raitha.
