Recipes - Tomato Rice

                    Ingredients:
2 cups basmati rice
6 tbsp. tomato puree
½ cup coconut milk 
4 pcs. cinnamon 
5 cloves
4 bay leaves
3 cardamoms
½ tsp. pepper
1 tbs.  broken cashewnuts
2 tbsp. ghee or oil
2 tbsp. chopped coriander leaves
Salt per taste
Method : 
Clean the rice and soak for about 15 minutes. Heat  ghee/oil  in a non stick vessel. Add the whole garam masala with  cashewnuts  and fry till light brown. Drain the soaked rice and add to the fried garam masala and fry for sometime.  Then add 4 cups of warm water, salt and tomato puree. Bring to a boil on high flame. Add coconut milk and pepper powder. Stir gently and  keep on slow flame for about 15 minutes or  till rice is soft and dry. Garnish with coriander leaves.
