Recipes - Ridge Gourd Dosa


2 -3 tender medium ridge gourds
1 cup dosa rice
1 tsp. methi / fenugreek
2 tsp. coriander
5-6 long red chillies
1 cup grated coconut
2-3 seeds tamarind
1 “ jaggery
Salt as per taste


Wash and soak rice overnight or for about 4 hours. Grind rice along with methi, coriander, chillies, coconut, tamarind and jiggery adding little water. Keep the consistency of the batter thick. Add salt and mix well.

Wash and clean the ridge gourds well . Scrape off the ridges slightly. Cut the ridge gourd into thin slices. Heat a dosa pan. Dip the slices of ridge gourd in the batter and set on the pan in the shape of a dosa. Sprinkle oil or ghee on the top. Turn and fry from both the sides until crispy. Serve immediately.
