Recipes - Spinach (basale/valche bhaji) Cutlets


1 big bowl of spinach
1 cup mixed vegetables (green peas / beans / carrots)
2 big potatoes (boiled / mashed)
½ tsp. chilly powder
½ tsp. ginger garlic paste
½ tsp. garam masala powder
½ tsp. turmeric powder
1 tsp. cumin
½ of a lime
¼ cup walnuts - (minced) (optional)
1-2 tbsp maida
Bread crumbs (sufficient qty)
Oil for frying
Salt as per taste


Wash the spinach leaves well and cook them in boiling water. Strain and set aside to cool.

In a pan, heat 1 tbsp. of oil and crackle cumin/jeera. Add mixed vegetables and sauté for 2 mts. Add salt and cook on slow flame covering the pan until half done. Add ginger garlic paste, chilly powder, turmeric powder, garam masala powder and mix well. Keep covered until the vegetables turn soft. Later smash or blend the vegetables along with spinach into a coarse mixture. Add mashed potatoes and mix thoroughly. Add salt if required.

Add little water to maida and mix well.

Take lime sized veggie mixture and roll out cutlets into desired shape. Dip them in maida water and roll over bread crumbs.

Deep or shallow fry in hot oil until golden brown in colour from both the sides.

Serve with chutney or sauce of your choice.
