Recipes - Ragi Custard
1 cup Ragi
1 cup freshly grated coconut
¼ cup Jaggery or as per taste
1 tsp. cardamom powder
2-3 tbsp. raisons and cashew nuts ( roasted in ghee)
1 tsp. ghee
Wash ragi well. Grind ragi along with coconut and water until smooth. Now strain this mixture two to three times and extract the ragi juice.
In a thick bottomed pan or a non stick pan, boil this ragi juice adding jaggery. Stir continuously to avoid formation of lumps. Adjust the consistency adding water. Once the mixture becomes thick, add cardamom powder. Now spread this mixture in a greased plate with ghee and even it. Sprinkle the roasted nuts on the top. Once cooled, cut into desired shapes.
