Recipes - Chicken Soup
5-6 cups chicken broth (stock)
1 bunch coriander leaves
2 “ ginger (cut lengthwise)
4 large tomatoes (peeled and deseeded)
½ cup mushrooms
½ cup bamboo shoots (finely chopped)
1 cup boneless shredded chicken
2 -3 tbsp. corn flour
1 tbsp. sugar
Salt as per taste
In a large pot, add chicken broth, ginger and coriander leaves and bring to a boil. Now add tomatoes, mushrooms, bamboo shoots, shredded chicken and cook until done. Add salt, sugar and lime. Mix corn flour in little water and add to the soup. Stir until the soup thickens. Serve hot.
Note: If using fresh bamboo shoots, keep soaked in water for about 24 hours, change the water 2-3 times.
