Recipes - Cashew Nut Macroons

Ingredients:

1 egg white

1 cup castor sugar

¼ tsp. baking powder

2 cups finely chopped cashew nuts

 

Method:

Beat egg white very well with egg beater.  Add castor sugar and beat well.  Add baking powder and mix well.  Add the cashew nuts and mix well with hand.  Make balls smaller than lime size.  Place them in the tray and bake in the oven on slow fire for 15 to 20 minutes.

    Love the cashew macroons. Always used to buy them but thanks to the above recipe, we will try making these ourselves from now remotely.

    Your recipe says 1/4 tsp of baking powder, whereas in your demonstration you say 1 tsp. Is it 1/4 tsp or 1 tsp.?

    Dear Fred
    Kindly follow the below instructions for best end results:
    1. Increase the baking powder to 1 tsp.
    2. Beat egg whites until stiff, adding sugar spoon by spoon. Tilt the mixing bowl and ensure that egg white doesn't fall. Beat until then.
    3. Add chopped nuts in batches of 3 and fold gently. Do not add at a time.
    4. Bake in pre heated oven at 180 degrees for 20 mts.

    I followed the above recipe to the letter. However, every time I make the lime size balls and place them on the cookie sheet, the balls collapse/spread and become flat. Is there something I need to add to the mixture to make the balls stay round and prevent from spreading. Appreciate any suggestions. All my friends love our Manglorean macroons!

    You are absolutely right. I did miss the cardamom pd. Bake it for 12 mts and place the tray on the middle rack of your oven.

    Hi Raina,

    Thanks for the recipe..
    Could you please tell me what should be the preheating temperature for baking macroons. Secondly, in which rack is the tray to be placed in the oven. I think you missed to add one more ingredient , that is cardamom powder. It will give a special taste to the sweet.
