Recipes - Pork Indad

1 Kg Pork (Semi lard/meat)

Make thin slices approximately of 2 sq inches apply salt, turmeric powder and marinate for a few hours. In a frying pan melt some pork fat and then slightly fry the marinated slices. Enusre that they do not scortch.

Ground Masala:

10 Long dry chillies
0.5 teaspoon pepper
10 cloves
4 dates or 8 raisins
1 Pod garlic
0.5 tablespoon cummin seeds
0.5 tablespoon khus khus
0.5 tablespoon raw rice
0.5 teaspoon mustard seeds
4 pcs cinamon bark
Marble sized tamarind

Broil the above and grind to a fine paste with a dash of vinegar.

Place a sauce pan on low flame, add oil or pork fat and add two finely sliced large Onions. When the onions turn golden brownish put the slightly fried pork. Add ground masala.  When the pork is cooked tender add little jaggery or sugar if sweetness is required
