Recipes - Tomato Pulav

Ingredients:

1 cup basmati rice
2 large onions (sliced)
3 medium tomatoes
5 green chillies
1 tsp. ginger garlic paste
1" cinnamon
4 cloves
2 cardamoms
1 bay leaf
1/ 4 cup coconut milk
3-4 tbsp. ghee
Few chopped coriander and mint leaves
1 tbsp. cashew nuts
Salt as per taste

Method:

Wash and soak rice in water for 30 minutes. Blanch tomatoes (soak in hot water until peel cracks). Once cooled peel and blend tomatoes into a puree.

Heat a pan with little ghee. Add cinnamon, cloves, cardamom and bay leaf. Add onion and sauté . Add ginger garlic paste and fry until raw aroma fades.

Add rice, tomatoe puree, coconut milk and mix gently. Add about 1 ½ cup water (liquid should be upto to 2 cups) Add salt and chopped mint and coriander leaves. Cover and cook until rice is 3/4 cooked. Add cashew nuts and sprinkle remaining ghee. Cook until done and liquid is completely evaporated.
