Recipes - Stuffed Brinjal Masala

Ingredients:

8-10 small purple brinjals
5 flakes garlic (peeled)
¼ tsp. methi / fenugreek seeds
1 tsp. urad dal
1 tbsp. coriander
½ tsp. cumin/jeera
½ tsp. saunf
¼ cup curry leaves
1 onion
5 red short chillies
1 “ jaggery
2 seeds tamarind
½ cup grated coconut
½ tsp. turmeric powder
Tomato puree ( made from 1 tomato)
2-3 tbsp. coconut oil
1 “cinnamon
4 cloves
1 star anise
2 small onions (minced)
Few chopped coriander leaves
Salt as per taste

Method:

Wash and slit brinjals keeping the stem intact. Heat oil and saute garlic and set aside. Fry chillies and set aside. Same oil add methi, urad daal, coriander, cumin, saunf, curry leaves and onion and fry for some time. Powder these ingredients. Then add chillies, jaggery and coconut with tamarind. Blend again. Stuff the brinjals with this masala.

Add water to the remaining masala and grind into a fine paste.

Heat oil and splutter, cinnamon, cloves along with star anise. Add onions and sauté. Add masala paste along with tomato puree. Add water and adjust the consistency. Place the brinjals and cook until soft. Garnish with coriander leaves.

Serve with chapathi or roti of your choice.
