Recipes - Mutton Kurma

Ingredients:

½ Kg. Mutton
½ cup curd
½ lime
½ tsp. turmeric powder
1 ½ tbsp. ginger garlic paste
4 green chillies (slit)
¼ kg. onion
¼ cup grated coconut
7-8 cashew nuts
2 large tomatoes ( finely chopped)
¼ cup coriander leaves (finely chopped)
2 tbsp. oil
2 cloves
1” cinnamon
1 cardamom
1 tbsp. oil or ghee
Salt as per taste.


Method:

Clean and cut meat into medium pieces. Wash well and drain well. Marinate meat for 1 hour adding curd, ginger garlic paste, turmeric powder, half of lime juice and salt.

In a pressure cooker heat oil/ghee, splutter cinnamon, cloves and cardamom. Add chopped onion and sauté until light brown. Add green chillies, tomato and sauté until soft. Add meat, remaining lime juice and mix well. Close the cooker and keep on high flame until one whistle. Later simmer and cook until 15-20 mts. or until the meat is soft.

Dry roast coconut and cashew nuts. Later grind into a fine paste. Add this paste into the cooked meat and bring to a boil. Add coriander leaves.

Serve with steamed rice or rotis of your choice.
