Recipes - Chicken Sukka with Powdered Masala

Ingredients:

½ Kg. Chicken
1 tomato
1 onion
2 tbsp. oil / ghee
¼ cup coriander leaves
¾ cup grated coconut
1 sprig curry leaves
Salt as per taste

For Masala powder:

6-8 long red chillies
1 tsp. coriander seeds
1 tsp. cumin/jeera
¼ tsp. mustard
3 cloves
¼ “ cinnamon
One petal of star anise
3 pepper corns
¼ tsp. turmeric powder
1 sprig curry leaves
2 tbsp oil or ghee

Method:

Heat oil/ ghee in a pan and roast all the masala ingredients individually until they leave good aroma. Dry powder these ingredients into a semi fine powder.

Clean and wash chicken pieces and drain Well.

In a heavy bottomed vessel, heat oil or ghee and add sliced onion. Saute until light brown. Add tomato and fry for some time. Add curry leaves, chicken pieces and half of the powdered masala along with salt.  

Mix well and allow the chicken to cook on slow flame.

In a hot pan brown the grated coconut adding remaining masala powder. Mix this coconut into cooked chicken and bring to a good boil.

Serve garnished with coriander leaves.

Editor’s Note: The masala powder could be made in large qty. and stored in airtight container.

    Add two tablespoonful roasted rice and one teaspoonful Methi roasted without oil to make masala powder which gives a rich taste.Not forgetting 2 cardamom capsels too.
