Recipes - Bitter Gourd Manchurian

Ingredients:

2 Medium bitter gourds
1 large potato ( boiled, peeled and mashed)
1 onion (finely chopped)
1 tsp. chilli powder
1 tsp. garam masala powder
3 tsbp. rice flour
1 tbsp all purpose flour (Maida)
1 tbsp. corn flour
1 tbsp. soya sauce
2 tbsp. chilli sauce
2 tbsp. tomato ketchup
2 tbsp. honey
2 tbsp. Chopped coriander leaves
Oil for frying
Salt as per taste.

Method:

Wash and cut both ends of the bitter gourds. Pass a long knife and scoop out the seeds. Apply salt and keep aside for thirty minutes. Heat two tbsp. of oil and fry finely chopped onion and mashed potato. Add chilli powder ,garam masala powder and a pinch of salt and mix well. Set aside to cool.  Later fill this mixture into the bitter gourds. Heat two tbsp. of oil in a pan and fry whole bitter gourds for a minute or two.  Later, slice them into half inch thick roundels.  Dissolve rice flour and  maida in water and prepare a thick batter. Dip bitter gourd slices in the batter and deep fry till crispy and set aside.
 
In a pan mix all sauces and honey with half cup of water and bring to a boil. Dissolve corn flour in half cup of water and add to the boiling sauce and mix well. Cook till sauce is thick. Add bitter gourd slices into the sauce and mix. Garnish with coriander leaves and serve hot.
