Recipes - Ladyfinger / Beans / Mogem (Field Marrow) Curry


Ingredients:

½ Kg. Ladyfingers or Beans or Mogem
1 “ Jaggery 
Salt as per taste.

For Masala (to grind)

2 tbsp. coriander
1/8  tsp. or a pinch of mustard
5 pepper corns
6 short red chillies
3 large flakes garlic
Small ball of tamarind
½ of coconut (grated)
¼ tsp. turmeric powder
1 medium onion

Seasoning:

1 tbsp. veg. or coconut oil
½ tsp. mustard
½  tsp. urad daal (black gram)
2-3 sprigs curry leaves

Method:

Wash, dry and cut the lady fingers into 2” pieces .  Grind all the masala ingredients into fine paste adding enough water.  Cook the ladyfingers adding very little water until half done. Add jaggery and salt. Now add the masala paste and give a good stir. Check the consistency of the gravy. If too thick add water and keep the consistency to medium thick.  Give a good boil. Now simmer and prepare the seasoning.
 
Heat oil and splutter mustard. Add urad daal and fry until brown. Add curry leaves and fry for few seconds.  Pour this hot seasoning over the hot curry, cover and set it aside.  

Serve with steamed rice.
