Recipes - Beetroot Cake

Ingredients:

3 cups flour
2 cups sugar
3 eggs
250ml oil
1 tbsp. baking soda
200 gms. melted chocolate or 4 tbsp. cocoa powder
500 gms. beetroot puree ( cook the beetroots, peel & then grind)
1 tsp. vanilla
1 tsp. salt
1 tsp. baking powder
100 ml rainbow milk

Method:

Sieve flour along with baking soda & baking powder. Beat sugar & eggs until smooth. Add oil. Mix well. Add flour, salt, vanilla and fold it gently. Now add melted chocolate, beetroot puree and mix well. Lastly add rainbow milk and mix well. The batter should be of pouring consistency.

Grease a baking dish and pour the batter and bake in pre heated oven for about an hour or until done.

You may cover the dish with foil when half done.

    You can use double cream which is easily available in any store in India,its cheaper and better than Rainbow

    Recipe seems good, but I feel that the baking soda recommended is too high, even 1 tsp instead of 1tblsp will give odd taste and smell. Please clarify.

    Rainbow is one of the brand names of condensed milk available in GCC countries. It is unsweetened tinned milk. I am not sure but Amul or other brands may be available in India that could be substituted for Rainbow
