Recipes - Lemon Rice

Ingredients:

1 cup raw/ basmati rice
2 tbsp. oil
2 cups water
salt to taste.

Seasoning:

2 tbsp. oil
½ tsp cumin
½ tsp. mustard
½ tsp. turmeric
2 red chillies
1 green chilly sliced
2 sprigs curry leaves
2 tbsp. chana dal ( pre-soaked in water for at least half an hour)
¼ cup unsalted roasted peanuts
Salt to taste
4 tbsp. lemon juice
2 tbsp. coriander leaves

Method:

Wash rice and soak for about 10 to 15 mts. prior to cooking. In a vessel add rice, water, oil & salt and bring to a boil. Once the water boils, reduce the heat to low and cover the pan. Cook for about 15 minutes, or until the rice is tender and the water has evaporated. Turn off the heat and set aside.

Seasoning:

Heat the oil in a frying pan on medium heat, stir-fry the peanuts until light brown. Take out the peanuts from oil and use the same oil for rest of the seasoning. Splutter cumin seeds and mustard seeds. Add red chilies, curry leaves, and green chilly. Stir for a few seconds. Add the chana dal, stir-fry for about a minute. Add turmeric and mix it well. Add the pre-cooked rice, peanuts and sprinkle salt and lemon juice over the rice. Mix gently and stir-fry for about 2 minutets. Garnish with coriander leaves. Serve with raitha or chutney of your choice.
