Recipes - Chicken Masala Roast

Ingredients:

1 kg Chicken (cut into medium pieces)
10 Kashmiri Chilies
1 tbsp. Coriander Seeds
1 tsp Cumin Seeds
1" Cinnamon
1 Green Cardamom
6 Cloves
8-10 Pepper Corns
1/4 tsp.Turmeric
1/4 tsp. Poppy Seeds
1" Ginger
1 Pod Garlic
Few green coriander leaves
1 tbsp. Vinegar
2 tbsp. Curds - or lime juice
Puree of 2 tomatoes
1 medium onion
Oil for shallow frying
Salt as per taste

Method:

Grind all the dry ingredients first, then add ginger, garlic, coriander leaves, vinegar and little water to make a thick paste. Marinate chicken pieces with 2 Tbs. of ground masala along with curds/lime juice and salt for atleast for 2 hrs. Take  oil in a pan and shallow fry marinated chicken till golden brown and keep aside. Now fry sliced onion in the same pan (add oil if required) till golden brown, add tomato puree, remaining ground masala and few coriander leaves. Fry for sometime. Add this masala to the fried chicken and simmer for 2 minutes. Add salt if required. Serve hot garnished with coriander leaves.
