Mangaluru, Mar 5: Marking the celebration of National Tourism Day, the department of hospitality science, YIASCM, Yenepoya (Deemed to be University) successfully organized a unique and high-energy culinary spectacle titled '28 States – Chefs, Dishes, Bartenders, Beverages in 28 Minutes' at the YIASCM Campus, Balmata, Mangaluru.
Claimed as the Fastest Culinary & Beverage Marathon of Each Indian State on National Tourism Day, the event witnessed 28 culinary cadets representing 28 Indian states, each preparing an authentic regional dish along with a signature traditional beverage within a precisely timed span of 28 minutes. The kitchen arena transformed into a vibrant culinary map of India, showcasing unity in diversity through gastronomy.

The initiative was conducted under the guidance of Prof Jeevan Raj, principal, Prof Shareena P, vice principal and dean, faculty of commerce and management, and Narayan Sukumar, vice principal.
The programme was spearheaded by Mervin Jaison Vas, head of the department of hospitality science, with committed coordination by faculty conveners Nitesh Someshwar and Vinyas B. The event documentation and reporting were diligently managed by Dr Anna and Lakshmi B M, supported by enthusiastic student leaders Fathima Rifa, Sanam, and Melroy.
Each dish presented was not merely a culinary creation but a narrative of heritage, geography, tradition, and taste reinforcing gastronomy as a powerful ambassador of tourism and cultural diplomacy. The synchronized preparation demonstrated discipline, teamwork, creativity, and time-bound precision, reflecting industry-ready professionalism among the students.
The celebration transcended conventional academic engagement, emerging as a dynamic blend of experiential learning, cultural immersion, and professional skill development. Through this innovative format, the department reaffirmed its commitment to holistic, industry-oriented education while strengthening appreciation for India’s rich tourism ethos.

To commemorate this remarkable achievement, a felicitation and certificate handing over ceremony has been scheduled as follows:
