Kashmiri food festival to make its debut in Mangaluru on Dec 6

Mangaluru, Nov 28: Mangaluru will witness the arrival of authentic Kashmiri cuisine for the first time as Square Suite is set to host a Kashmiri food festival titled From the Valleys of Kashmir to the Coasts of Mangaluru – The Authentic Wazwan to Your Table on Saturday, December 6 at the St Sebastian Centenary AC Auditorium, Bendur.

According to the organisers, the festival will feature a grand multi-course Wazwan meal prepared by a team of professional chefs flown in from Kashmir exclusively for the event. The dishes will be cooked using traditional methods, with no added colour or taste enhancers, and will be served in a fully air-conditioned venue with reserved seating arranged for each family or group.

The event offers two dining slots: 7 pm to 8:30 pm and 9 pm to 10:30 pm.

Extensive set menu announced: The set menu includes a welcome drink followed by a variety of starters such as chicken coriander clear soup, mutton seekh kabab, tabak maaz (lamb ribs pan-fried in pure ghee), chicken roast, and nadru (lotus stem). Walnut chutney, radish chutney, onion-mint chutney, and veg salad will also be served.

The main course features several traditional Kashmiri dishes, including:

• Mutton Rogan Josh – Lamb cooked with aromatic spices
• Mutton Daniwal Korma – Lamb cooked with coriander leaves
• Tamatar Chaman – Tomatoes cooked with fresh paneer sourced from Kashmir
• Mutton Rista – Saffron-flavoured lamb meatballs
• Chicken Marchwangan Korma – Chicken cooked with Kashmiri chilli
• Mutton Goshtaba – Lamb meatball cooked in yogurt

These will be served with pulao, basmati rice, and wheat roti.

Desserts include phirni and Kashmiri saffron kahwa, prepared with saffron, almonds, and honey, and served from a traditional samawar.

Cultural elements of Kashmiri cuisine highlighted:

The organisers have showcased several components central to Kashmiri culinary heritage.

They explained that praan, the native Kashmiri shallot, is widely used to give dishes a rich, sweet-pungent flavour, while the rare ek pothi lahsun (single-clove garlic) offers an intense aroma and medicinal value.

The ceremonial tash naari, a copper basin and ewer traditionally used for hand-washing before a Wazwan feast, will also be part of the festival setting.

Key dishes such as rogan josh derive their natural red colour from Kashmiri chillies and mawal, the dried cockscomb flower that adds earthy flavour and vibrant colour.

Additionally, the festival will highlight kahwa, a spiced green-tea infusion with saffron and almonds, and nadru, the lotus stem harvested from the lakes of Kashmir.

Guest guidelines:

Guests are advised to occupy their seats within 30 minutes of their allotted dining slot. The organisers clarified that each guest, including children, will be served an individual full-course set meal. Takeaway arrangements will be available for any remaining portions.
