Mangaluru: Advanced techniques in bakery, confectionery workshop held at Sarosh Institute

Mangaluru, Feb 11: A national level seminar on 'Advanced Techniques used in Bakery and Confectionery' was conducted on Saturday February 8 at the Sarosh Institute of Hotel Administration College campus in Kodakal, Kannur. Registration began at 8.30 am. Students and faculty from Moti Mahal College of Hotel Management, The Yenepoya Institute of Arts, Science, Commerce and Management Mangalore attended along with the students of SIHA.

The seminar started with Lighting of the Lamp and a prayer song by the students.

Principal Amar Cherian welcomed the participants and students of SIHA. The chief guest, chef Sinu S Vijayan, executive chef The Gateway Hotel, inaugurated the event and delivered the keynote address.



In the first session in the morning, resource person Prof Amar Z. Cherian, principal of the college who spoke on the techniques used in bakery and confectionary and the latest styles of plating dessert.

In the second session, resource person Shobha Chengappg, Coorg Paparika, demonstrated the latest techniques used in chocolate making.

In the third session, resource person chef Sathish Kundar, pastry chef, The Yenepoya Food Craft demonstrated the latest techniques used in chocolate making cake icing.
