Recipes - Mango, Sweet Pickle


½ kg. raw mango
350 gms. jaggery
4 tbsp. oil
4 tbsp. vinegar
2 tsp. saunf
1 tsp. white mustard
1 tsp. methi seeds
½ tsp. turmeric
1 ½ tsp. asafetida (hing)
10 long red chillies
1 tsp. black salt
1-2 tsp. salt


Melt jaggery in water and set aside.

Peel and cut mangoes into 1” pieces. Dry roast saunf, mustard and methi seeds. Once cooled powder the dry roasted ingredients and set aside. Dry roast long chillies and powder them coarsely.

Heat oil and fry the mango pieces. Add salt, turmeric, powdered masala, chilly powder and stir well. Add asafetida (hing), black salt and strained jaggery water and cook until jaggery thickens until a one string consistency. Lastly add vinegar.

Store in a airtight container after cooling. Could refrigerate for a longer use.
