Recipes - Mixed Vegetable Pickle

Ingredients :
½ kg. Carrot
½ kg. Tendli
½ kg. Raw papaya

For Masala :
Red chillies 100 grms (50 grm bedki + 50 grm kashmiri)
1 tsp. Cumin seeds
2 tsp. Mustard
½ tsp. Turmeric powder
1 tsp. Methi.
6 nos. Pepper.

For seasoning:
250 grms  oil
Mustard seeds
Curry leaves
50 gms garlic cut into small pieces
25 gms ginger cut into small pieces
½ tsp hing
200 gms sugar

Method :
Wash & cut all the vegetables into pieces, apply salt and keep it overnight.  After draining water keep in sun for 2 days.  Roast all the ingredients of masala, grind  with ½ cup of vinegar (mixed with hot water)  and mix it to vegetables,  keep it for one day.
 
Next day in  a frying Pan, heat oil, add mustard, curry leaves, finely chopped garlic, ginger & hing.   Add sugar, stir it well.  Let it cool then add mixed vegetables.

    There is no need for tendli. Cauliflower (florets) is equally good if not better. You can also skip papaya. What is missing in this recipe is oil - it has to be sesame oil.

    @Carlos Costa Brazil,So far I know gurkins(tendlis) are through their roots ,or thick stemm are further developed.but not ripe fruits.I am sure tendlis are available in brazil.They Export them.Ask some vendoors there itself.some small tendlies seeds are available in packets as maxico gherkins .They are small like Hazel nuts but look and taste like tendlies.I bought it and tried.

    Hi,Dom,since you are in USA,if you want roh Papaya,try in Chinese store.They have mostly all sorts of veg.in their market.wish you good luck.

    I am in US and got some tendlim from my Mangalorean Friend's garden... Planning to make pickle and skipping the raw papaya unavailable...
